How many star Jasmine do I need to cover this space?

See pic. I have one star jasmine planted in spring behind the overgrown Acer (Acer to be pruned back). Trying to cover the area in red circle.
Do you think I will need a second star jasmine to get the bushyness and coverage.?
I don't want to wait several years for it to grow and then realise I should have planted another. Similarly, I don't want to have more than I need and it get too full/busy.

I have a couple in the garden and they seem to grow more up than out and not terribly quickly - I would probably put another one in to that space0

Plants spend their first year establishing a root system that will support the top growth.
Planting another won't make either grow any faster unless you buy a large established plant.
You could consider Jasmine beesianum with small red flowers which grows fast to cover the fence while you wait for your star jasmine to get there.I can rise and shine - just not at the same time!

Yeah, am thinking that i dont want to realise in 5 years that one star jasmine was not enough and then plant a second one and have to wait another 5 years.0

Do it then.Easier to cut one down if it's too much eventually than start another
