    The USA do like to try and tax everyone.

    You are probably exempt because of non resident alien status.

    That has limits on how many days you can spend in the US not just work visits holidays as well.

    If you fail that test there are further test to be exempt like having another tax base like the UK and meet some other criteria.

    This is one issue with a tax specialist trying to give mortgage advice and mortgage specialist trying to give tax advice.

    What he did mention was, that while I am employed in this way, I will always have problems trying to get a mortgage.

    One thing he did note was - He thought it was funny I didn't have to do a US tax return? As I am not a US resident, I didn't believe I would ever have to do one and my accountant hasn't advised otherwise? The first I have heard of it...

    As I think I mentioned earlier, I've been in the same position as you with regard to the US 'employment' problem, but I went in a different direction for exactly the reasons you are facing.
    So much of what is the right structure depends on a lot of detail about what you are doing for the US company, where you do it and what they do on the basis of what you do and where they do that, that it is well beyond the scope of a public forum to say if you or your employer have been well advised in going down the path you have chosen.
    ... but re a US tax return for you, I would suspect that your 'employer' does not list you as an employee on their books or you would have heard from the IRS by now.
    In general as long as you are doing the work for them in the UK, and not the USA you should not have any exposure to the IRS as long as you are not a US citizen or have otherwise been subject to US taxation before.
