New York for Xmas 2021?

We plan to go to NYC for Xmas now that we are fully vaccinated and restrictions will allow (from Nov).
It's currently much cheaper for us to book hotels and flights separately but I wondered if this would be wise as opposed to booking a package with BA, Virgin, Tui etc?
The hotel would allow cancellation up until the day of check but I am not sure of the flight (currently looking in to this).

Use a travel site to book hotel separately where no prepayment required - it makes things so much easier if circumstances change0
