Does anyone know when or how frequent the Eurostar ticket sales are?

There is nothing currently available on the MSE Eurostar page.

We're looking to book for either Easter or Spring Bank Holiday next year (2022).

There haven't been any for the last two years during COVID, indeed at one point they were down to one train a day to Paris and one to Brussels. They are slowly increasing the number of trains now, but sales will only occur if they see a lot of empty seats ahead. You are extremely unlikely to see sales at Easter or any Bank Holiday, under normal circumstances the trains are packed and the queues to get through immigration and check-in at St Pancras have been way beyond my tolerance level!
