Looking to book a break abroad at short notice but there seems contradictions (or 404 pages) between info from travel co's, testing co's and gov websites especially about whether a covid test before leaving UK is required if you're fully vaccinated. Is there an reliable source of requirements that's up to date?

the most reliable source will be the government site of the country you are planning to visit (the information on FCO 'should' be the same but best to double check)
Ryanair has a table on their website with the links to the government sites for the countries they fly to which may be useful

As each country sets it’s own rules and can change at any moment it difficult for anyone to keep up . I have found the UK Gov website has usually updated changed rules for other countries within 24 hours of the changes , (often sooner than that ) it also gives the links to foreign countries websites (where they are available)so you can check for yourself.(although these aren’t always updated )
In the main UK travel companies take their advice from the UK Gov website and some are a bit slower to update their websites/ inform their staff.1 -
The Jet2 site is one of the better ones from the airlines

Anything about leaving the country is driven by the destination country and so the easiest source is the FCO website as its in english and targetted at people coming from the UK/british nationals. If you Google your country of choice plus FCO and go to the Entry Requirements page then it;ll say what the FCO's understanding is.
Be aware however at times things change quickly and there are mixed messages... even our own government was flip flopping between within 72 hours and within 3 days for the prior requirement of a lat flow test for entry. As such it can be useful to double check the government website of your proposed destination but that depends somewhat on how good the country is at updating this type of thing and how your language skills are.1 -
