New build house purchase / Quitting my job to become self-employed

Just after some advice regarding my current situation as described below..
Currently in the process of purchasing a new build house, due to be complete in January 2022.
Contracts exchanged, mortgage offered and complete. Not paid deposit yet but everything else appears complete and just waiting to move in now.
So, I currently work employed 9-5 office job which I absolutely hate (10 years in), but I am also self-employed online coaching earning more money so aim to quit and become fully self-employed, can easily afford my mortgage so no drama there.
My question is - Would it be ok to quit my job and become self-employed now before I move into my home or would it be wise to wait until moved in? Seen that lenders sometimes do a final check for income?
Feel at a dead end, work is making me miserable, feel such a struggle to hold off for a few more months! Advice welcomed please!

Quit your job now (or any time before completion) and you'd have to declare it to your lender, and hope that they're satisfied with your (provable) self-employed income.1

For the sake of 3 months, I’d stay employed and move in first then start 2022 with a new home and new career.1

I know looks like I'll have to and keep telling myself it's only 3 months. Just mentally draining working here now lol but seems like I'll have to just suck it up! Thanks both0
