About keeping ham: this comes from a NZ government site on food safety -
"If you’re having a fresh ham, consider cutting off some of the meat and freezing it in clean freezer bags so it takes up less room in the fridge. Ham on the bone will last one or two weeks at 2-4°C (so freeze anything you won’t eat during that time). Keep the ham covered with a clean damp tea towel, changed daily.
Keep the ham away from tiny fingers that may be tempted to pick at it! That’s not because they’ll lose their appetite for dinner, but because they may have been playing with animals, in the garden or in other places where they’ve picked up bacteria that could contaminate the ham."
In Australia and New Zealand you can buy a fabric 'hambag' to keep it in, the same principle applies, soak the bag daily and then put the ham back in it. With care, the ham will keep for well over a week (you'd know if it was off).

Help from anyone who has cooked Ham in Coca Cola, I have it in now, it was a huge gammon, so would only fit in my jam pan for which i don't have a lid. The liquid is evaporating fairly quickly. I have no more coke, do i top up with water so the gammon stays covered or let it reduce?There is nothing either good or bad but thinking makes it so.0

I want to do Nigella's cola ham but I have a question please.
I want to do the boiling today and then chill it and finish the roasting in the oven tomorrow. Is this ok to do?

Well if you look at my 'help Urgent help needed thread' from last night you will see that I almost cooked it before I found it was very salty.I took it out of the slow-cooker and soaked it in cold water over night and kept changing the water every half hour or so .(I went to bed at quarter to one this morning and was up again at 6.30.a.m.)I then shoved it in the oven to finish it off, and it tastes lovely .I'll never believe the butcher again when he says 'it's o.k. don't worry about bothering to soak it '.I'm off to Midnight Mass tonight as well, I shall be fast asleep all day tomorrow at this rate .0

I am thinking of buying a gammon joint this weekend to use in sandwiches for work next week instead of the usual plastic tasting ham from the supermarket.
If I cook the joint on Sunday, how long will it keep in the fridge? Or can I freeze it?
Also, is the best way of cooking it to bake it or boil it? Which would be healthier?

It should keep for a good 3 days in a fridge, you can slice it & freeze it in lunch-size packets which will make it last longer.
I tend to use Nigella's ham in coke or ham in ginger ale recipes, which are boiled then baked to glaze. I don't think either are particularly unhealthy :rolleyes:0 -
I usually boil then add cloves brown sugar and mustard then bake until the coating is golden brown.
Gammon will normally keep for about a week if it's stored well covered in the fridge but there's a thread on how long to keep gammon so I'll add your post to it to keep all the replies together.

I roasted a ham last weekend and the leftovers have been wrapped up in tin foil all week. Safe to eat?

Yes;) A cold baked ham will keep for about 10 days in the fridge. You can also cut it into chunks/slices and freeze it.0

I usually roast one and it lasts us about 2 weeks. Its kept wrapped in foil in the fridge and is used for sandwiches mostly. If it gets to the middle of the second week and there is any left I make sure I use it by the saturday by chopping it up into chunks and make it into a carbonara sauce.Mortgage, we're getting there with the end in sight £6587 07/23, otherwise free of the debt thanks to MSE help!0
