Got a quote, £450 for 10th December 2021 start (They allow 90 days early).
Requoted today to take it out for actually 15th December 2021 start and its now £656! Can I just use the original quote and take it out with a start date as agreed of 10th! I cannot believe how volatile the quotes are

Does it cost (any extra on top of what you've paid) to cancel your old insurance? If not then you could also cancel the old insurance to remove the overlap period and then solve the problem that way.
Or just ask the new insurance company to match their other original quote1 -
Remember NCD can only be used on one policy at a time and so if you have quoted with the NCD currently being used on the existing policy then you cannot overlap0
