Planning EuroDisney 2022

We have been thinking of EuroDisney for a while and want to start investigation into booking now dates will now be bookable. Will be looking to go next summer holidays.
I haven't booked or been abroad for just short of 20 years so have no idea where to start - no valid passport so obviously need to look into that.
Myself, my mum and my 10 year old daughter will be going ideally for a 3 night stay.
Not wanting to turn this into a massive post, I'm looking for any advice on booking and making the most of being at EuroDisney. Being MSE I want to get a good deal but crucially I don't want to scrimp and some elements will be worth spending money on - particularly as it may be the last "abroad" holiday I may have for a while.
To start I have never wanted to or being a fan of all inclusive, every holiday I have had has been in the UK and we are just used to catering for ourselves. Can you eat well and reasonable priced out of EuD and do you have to venture far? Can you go just B&B?
Hotels, is there a good choice of hotels out of the EuD complex or is it best to stay within the EuD complex? We will be booking two rooms, one for me and one for mum + daughter.
Rides, is it basically a theme park. Is it big, will we have enough time to see all in 3-4 days?
Lockers - can you stow bags in lockers if we don't want to carry them?
I cant really think of everything right now, but if anyone has any experiences or can link me to a good planning website that would be appreciated.
We are also looking to add a nights stay in London before getting the Eurostar but appreciate that might be too much with respect to luggage.
