Soda bread

I think that I may have finally got the hang of soda bread. The trick seems to be to bake it longer and hotter than it could possibly need. Then leave it in the oven for another 5-10 minutes. :)

    It does need a very hot oven.

    I use buttermilk, and milk to which I add a teaspoon of cider vinegar. 
    5 parts liquid to 6 parts self raising flour, so usually 600g to 500g. 1 teaspoon of bicarbonate.
    Quick mix, shape, cross cut on top, in the oven for 35 mins.

    I can vouch for this recipe Quick Carrot And Walnut Bread Recipe - olivemagazine which tasted delicious the day it was baked and even better toasted on the following three days.

    My notes say that I used Shipton Mill wholemeal spelt flour with Homepride plain flour and fat free greek style yoghurt and that I couldn't taste the carrots at all despite being able to see tiny orange flecks when I looked closely.
