Having a couple is no bad thing, AmEx where possible if you get the best rate, backup something like the Lloyds Mastercard one

I use Amex backed up by Amazon as I sometimes find I can’t use Amex.
the Amazon rate is not the best but the rewards come quickly and I can always unlike for example airline points,2 -
Rarer and rarer to see Amex declined now. In terms of shops, all the supermarkets accept it now, as do all the big DIY retailers now B&Q accept it. Probably the biggest chain to not accept it is B&M, and I've found certain branches of Poundland also don't accept it for some reason.

My wife and I have house and car insurances with LV= and unfortunately they don't accept Amex. But I agree with WillPS, that most chain shops do accept it now. Small, local traders are the ones who likely don't. So it all depends where you spend your money.
BTW, definitely have an alternative for anything you spend abroad.1 -

As always, it will depend where you shop. 90% of my UK spending is able to go on Amex - they have clearly been targeting smaller retailers through their 'shop small' promotions, and I've found more and more independent restaurants starting to accept them.In the 50 days since my last rebate, I've already racked up about £130 new cashback so if you can be disciplined, it definitely pays to have it over time.
Plus if you are new to Amex, you can get the double benefit of the initial 5% cashback rates, and if you know/ask an existing cardholder, you might both be able to benefit from a referral bonus (my own card lets me refer people with £50 to the applicant and £60 to me, so they really are pushing for new business!)

ive got the amex nectarcard, only place i cant use the card is KFC they dont take it
and a little tip if, have it as your main payment card on paypal then use that if you can, as i pay council tax * esso fuel on paypal and pay it straight off, then the points add up quickly1
