Holiday Insurance when postponing booking due to Covid restrictions

I am struggling to get my head around overseas travel insurance when I have to keep postponing my trip to the following year, there must be thousands in the same situation.
We were due to go to Kefalonia in May 2020 and took out a single trip policy for a couple at around £25.  Because of Covid we didn't go and postponed till May 2021.  I was advised the policy could not be carried over so took out new cover for 2021, again around £25 - we got no refund for 2020 policy.  Due to the Covid situation in May 2021 we have again postponed until May 2022.  I obtained a single trip quote from the same company who were now charging around £90.
So basically I've paid for two lots of insurance for a holiday I've not yet been on.  Has holiday insurance cover really gone up that much?  I've had quotes from comparison sites for around the £25 mark, are there any pitfalls I need to be aware of if I go with the cheaper quotes?
Hopefully someone can shed some light on the subject.

    I am afraid it has , you might have noticed a thing called Covid that had decimated the travel industry .I suspect that everybody who lost holidays in the last year and a half have claimed off their insurance.
    Cheap insurance is cheap for a reason ,as for loosing £25 x 2 ,such is life ,no consolation but you could have lost a lot more PLUS if you had had an accident before you were due to travel your insurance would have covered you.
