My charges for Talktalk have increased mid contract and 'add ons' that I haven't ever asked for have also increased with no notification. I want to leave talktalk but they are going to charge £30. If I renew my contract for another 18 months mid contract, can I then cancel in the 'cooling off period' and be able to switch providers with no charge?

Unlikely .You need to speak to TT regarding these unasked ? for add ons .Be aware that many ISPs including TT now have a built in price increase in the new contracts .£30 suggests you are near contract end date and would then be free to move /0

"Add on" prices have not changed, however a discounted period may have ended hence the change.
If you do not require the boost(s) they can be removed in your online account or by calling 0345 172 0046.
I think you are getting confused, the £30 is a standard mid-contract admin fee for any changes.
Termination fees are "per month of remaining contract"
If you renew, all you can do within the cooling off period is revert to your previous terms, it's not a get out of jail free card !
If, like many, you were subject to £2.50 price rise you would have been notified around your billing date a month before the rise, then you WOULD have been able to leave in the following 30 days without penalty.
If you missed the email or that period, you are stuffed.1 -

I signed up for an 18 month Guaranteed Fixed Price contract in December 2020, but got an email telling me the price was going up in July 2021, with a further increase to follow in April 2022. A total increase of 16.7% whilst still in the Guaranteed Fixed Price term.
Spoke at length with Customer Service and was told that TalkTalk T&Cs include a clause which allows them to breach the contract without penalty (Clause 16.2).I was offered a new "Guaranteed Fixed Price Plus" contract at a lower price, but I don't trust them to keep this contract, as they have already shown their word is not worth the paper it's written on!Why on earth would I stay with a company which has already breached the contract, and has a "Breach Of Contract" clause (Clause 16.2) in their T&Cs?
It may be legal, but it is certainly unethical, and I will never sign up with TalkTalk again.

This is the infamous Clause 16.2 of their T&Cs:16 MAKING CHANGES
16.1 We may need to change your services, equipment, charges or agreement for legal, regulatory or business reasons. If so, we’ll tell you about this in writing or by publishing a notice or updated terms and conditions on our website.
16.2 Except for any price increase referred to in paragraph 9.2 above, if a change is to your material detriment, we’ll give you at least 30 days' written notice (by letter, email, SMS or via your monthly bill). If you object, you may end your agreement without charge (other than accrued charges), provided you contact us (see paragraph 19 below) within 30 days of receiving the notification. If the change is to your mobile agreement, you may only end your mobile agreement as this is a standalone agreement, unless we’ve told you otherwise.

All such providers have always had a clause like that ... TT are not unique in this respect.
It's still not reasonable though, to advertise a contract as Fixed Price For The Contract Term (or howsoever they expressed it) and then break that "promise" within months.Jenni x0 -

Just checked my payments with TalkTalk.I moved to them in December 2020, following a link on this site, and got an "18 month Plan with a Fixed Low Price Guarantee", with £100 cashback.Due to TalkTalk breaching the contract by increasing the price, I have switched supplier penalty free. I've paid them £161 for the 7 months I was with them, and got the £100 cashback as promised, so it ended up costing me £8.81/month for Fibre 65.
