Im due to travel to Italy next month, current advice is I can with negative AntiGen or PCR test prior to travel and I can get insurance to cover me if this gives a positive result. But I am struggling to find an insurer to cover if Italy change the rules and say they no longer accept people from the UK regardless, does anyone cover this eventuality or am I wasting my time searching?

You need to self isolate for 5 days on arrival then take another test for release

    https://www.gov.uk/foreign-travel-advice/italy/entry-requirements

From 21 June to 30 July, on arrival in Italy travellers who have been in the UK in the previous 14 days must present a negative molecular or antigen test taken in the 48 hours preceding entry into Italy and fill in a digital localisation form. They must also self-isolate for 5 days, at the end of which they must take a rapid antigenic or molecular swab test for COVID-19 and test negative for release. Children under the age of 6, from the UK, do not need to test but are not exempt from self-isolation.

Everyone arriving in Italy must also call the COVID-19 helpline for the region you are travelling within 48 hours, to inform them of your visit.

If you wish to fly, you must present the airline with a negative COVID-19 rapid antigenic or molecular swab test taken no more than 48 hours before travel.

Travellers arriving without a negative test will need to self-isolate for 10 days and undertake a test at the end of the isolation period.
