I'm guessing you've already established that your joists aren't running the right way? 

If they are top to bottom on your plan, they'd just go under the floor!

No issues here hiding pipework in the wall. Looks so much neater, easier to keep clean (no pipes to get dusty) and if there is an issue, that’s what we pay home insurance for as long as you have the trace and access cover.
