Thanks for all the advice and opinions guys, appreciated. 

All these options cost money… hiring a 7 seater for the week is the most, followed by the 2 nights mid-way accommodation, and then the new car seat. 

Apparently the safest place for a car seat is in the middle back row anyway, so I think I might just buy another seat, & sell the one I have now as it’s too wide for the middle. 

The middle seat in the Honda CRV has 3 point harness, and a slightly off centre iSofix point. So I’ll get a top scoring seat and it’ll probably cost me around £160. Still way cheaper than the other options, & I could claw some back by selling my current one.
But I’ll also split the journey up into walkabout stops, starting my journey very early in the morning so kids can sleep the first stage. 

So several hours or so, but as long as I can have less moaning for that duration, my mental health will thank me later.
