Mortgage application query - New job/Current job

Hello all,
I have a query regarding my current situation. My partner and I have started the process of buying a new build house. We have an agreement in principle based on our current financial situations. It is all affordable and we have been accepted for the house and can move forward. Now, this isn't a mortgage offer and we have to apply for that, this will be taking place next week.
This all seems like there is no issue, however my partner has recently accepted a new job (the reason we want to buy/relocate closer to the job), this offer is subject to vetting and we do not know when the start date is. The new job is higher paid than her current one. As a result she will be working in her current job until her notice is carried out (this could be 1 month, or 3 months or more). As we have calculated the affordability on our current situation, and this will not change before the exchange of contracts, does anyone foresee issues with our mortgage application using our current situation? Our concern is that due to the vetting, we will not be able to officially verify her new salary with a job contract until this is done, we do have a job offer letter stating the salary and probation period (lender is ok with permanent jobs with a probation period).
Question I'm asking:
Can/Should we proceed using our current employment for the mortgage application and inform the lenders when she starts?
As we are being honest and up front, there is no change in affordability (this is technically improving), we are putting down a good deposit and I bank with the lender we have chosen. The only hiccup we have is the verification of the new salary and having to wait (potentially 3 months) for said verification.
Any help would be much appreciated, it is a major panic.

@housingrookie Has your partner resigned?As of now, is the property that you are buying within commutable distance of her current job?

If you have not resigned, and your new job is subject to ongoing vetting (so theres no guarantee that you will move) and it pays better than your current job, then I don't see why you can't apply on your current job.
The only problem I think is if the bank policy asks for minimum time in job or doesn't like probation or something like that.2 -

@K_S she has not resigned and is not going to hand in her notice until she has passed vetting. So if all things went wrong, she would still be in her current job. Yes it would be commutable (1 hour), she has previously done this commute.
@lonibra There has been no notice served, just waiting on vetting. All of our calculations use our current situation not the prospective one too. It makes logical sense to use the current job right?
It is with Halifax and I understand they are understanding when it comes to mortgages? Probation/New jobs wise anyway.1
