Being asked for balance of a hol when I'm already owed £ from cancelled hol with same firm

My Olympic holidays trip in May was cancelled and in lieu of full repayment I offered to use what I was owed to pay the balance of another holiday I'd booked with them for September and just be refunded the excess. They agreed but 3 weeks later i'm still being badgered with reminders to pay the balance of hol no. 2 which is due next week and my emails are not being answered and phoning is frustratingly futile. I'm wondering should I write to them rescinding my offer and just pay the balance so I'm not in breach of t&c then claim my original cancelled holiday money through my credit card?
