iPhone 6s > 6s data transfer; WhatsApp!

My wife needs to transfer all her data/Apps etc to a
replacement iPhone 6s.
Transferring the data etc isn’t a problem using the Quick Transfer but the last time she did the operation a year or so ago everything was ok except WhatsApp,...she lost all her historic WhatsApp contacts/messages.
Both devices are on iOS 14.6
How can she ensure that WhatsApp transfers correctly?....or does it need to be transferred separately? i.e. not through ‘Quick Transfer’. Not sure how to tackle this.
Also, when should the SIM card be moved to the replacement phone?...before or after the ‘Quick Transfer’?....or does it not matter?
All replies gratefully received

WhatsApp has a built in backup and restore, just look under settings.

OP here,
Starting ‘Chat’ backup within WhatsApp appears to upload to iCloud just 3.4MB (of 1.99GB) and then it just stops and sits there for hours...overnight in fact! ....see 1st screenshot.
However, the normal iCloud Backup (performed last night..see 2nd screenshot) appears to have already copied WhatsApp Messenger (3.4MB) but there is no separate notation of the WhatsApp data (about 2GB!) being copied to iCloud Backup.
iCloud Storage just says “Backups 2.5GB”....do I assume that the WhatsApp data (about 2GB) is held within the aforementioned 2.5GB ? (see 3rd & 4th screenshot)
WhatsApp is definitely switched on as one of the “APPS USING ICLOUD”

Looking at your screenshots I’d suggest that the reason your WhatsApp backup never finishes is because you don’t have enough iCloud storage space for the backup.I don’t know whether WhatsApp data is included in phone backup or not.3

Followed every instruction I could find on how to back-up everything to iCloud including backing up within WhatsApp itself and completed the transfer over to the replacement phone.
The transfer was completed and I downloaded ‘WhatsApp ‘ onto the new phone and set about recovering the WhatsApp data from the iCloud.
Unfortunately, as before, it failed!...the WhatsApp pics & vids can be viewed on iCloud but when I try to recover through WhatsApp itself I just get the message ”iCloud Recovery...no backup found”.
Perhaps it’s because it’s a relatively old phone now,...or sumfink like that. WhatsApp and iPhones do like a fight every so often.
Mrs Dickus none too pleased though,...I’m in the doghouse again.
