I never use my extractor fan and my kitchen certainly is not covered in grease, and never has been in any of my kitchens. I can’t stand the noise, no matter how quiet0

We have but rarely use our hood extractor. We don't eat fried food so we've never had any greasy deposits.
Condensation isn't too bad with lids on pans, although gas puts a reasonable amount of moisture into the air.0
