Offers over and viewing days

Hi all. We are in a part of the world that has gone absolutely crazy with house demand, everyone is wanting to escape to the country and thus even getting to view a property is becoming impossible. Most properties when listed now have specific days for viewings and if you can't make the day or time you don't get to see it. Everything is going for offers over....we had 5 offers over on our property which is now sstc. We like a property that has set viewings 3 afternoons this week...my husband has already seen it and I'm due to view tomorrow. Assuming we want to proceed we have to submit offers by next week. My question is do we submit now and try and get them to take it off the market or do we wait till all the viewings have taken place? They will definitely get multiple offers. 
 
We are able to offer significantly over the asking price but we also are wary of being caught out by the lender undervaluing the property which happened to us on a previous property and we ended up having to top up with cash...in the end that sale fell through. I am planning to ask the agent tomorrow if they have any offers yet and if they are over asking price to try and gauge where to go with our offer.
Any advice would be welcome!

    What difference will you viewing make to whether the lender undervalues it? 
    Also, if this is likely to be as popular as you think, why hasn't it already had an offer and been taken off the market? 
    Two reasons occur to me - vendor won't take it off the market until all current viewers have visited, or it's not as great a deal as it seems and no offers. Assuming the former, since they already have said offers by a particular date, and you say it definitely will get many offers, it seems unlikely the vendors will take it off unless you offer well over asking. Which, by definition, no one has done so far.
