Replacing Victorian Deafening - what with?

Hello all. In midst of refurb of Victorian house over two stories. Timber joist ends have rotted, so are being replaced.
Floors taken up in upstairs, and ceiling down in downstairs to allow access to joists. Timber deafening boards and mortar that was used on top and below floorboards as deafening have now been removed.
Question is: before replacing floors and ceiling, what do we replace the deafening with? Is there a better modern equivalent than mortar pasted on top of lathes that will do the job? Thinking acoustic rigid boards, but how thick and how to install? Appreciate any advice on this, thank you.
