I showed the EA our proof of funds for a cash offer, they were happy with sight of it but didn't ask to keep copies. They did want copies of passports>

EA is regulated under money laundering law. It is in their interest to check it. Why are you worried? You can just pass the page showing the total amount of your fund to them, which is what I did.0

And people wonder why the process takes so long.
The estate agent has asked for a copy as per their requirement. If you're not happy with complying then you're out of luck.
It still baffles me how many people think the rules/requirements don't apply to them and will go out of their way to get round it rather than simply comply.1
