This year I'm doing a lebkuchen trifle, inspired by a pudding I had in Germany. Sweetened whipped cream with a pinch of lebkuchen spice mix or crushed lebkuchen, layered over crushed amaretti biscuits and a spoonful of black cherry conserve, served in individual glasses - yummy!

Liz that sounds SO good and my OH adores lebkuchen..... i am definitely going to try that out. Will have to think about replacing the amaretti biscuits with something else because I'm not too keen on them myself - maybe just lebkuchen on the bottom as well?

this sounded quite a grown up pudding.
Here in Spain, I don't expect I'll be able to get lebkuchen spices or cake unless they sell it in Lidl, what would you suggest a a close alternative please

Also is it cherry conserve at the bottom, amaretti then flavoured whipped cream, just one layer of each or two

    Thanx

Sandy - here in France they DO sell lebkuchen in Lidl! Also stollen and pannetone, both of which aren't French either. Worth checking when you're next there.

Last year we had pears poached in a bottle of Moscato di Tempio, my favourite dessert wine, with cream and ice-cream...light and delicious after heavy meal

It's going to be an ASDA Raspberry Roulade for us this year with some nice ice cream.

In the past we've had Viennetta and pavlova. Last year asda did individual chocolate with chilli steam puddings - which OH adored (I had the basic christmas pudding version - because I'm the only person in the family who likes it).
  • Any suggestions for a diabetic please? I've bought myself a mini Christmas pudding ( OH has never liked it anyway ). Everyday he has yogurt or plain vanilla ice cream; he doesn't eat fruit at all except a banana. Sometimes I make something using sugar substitute but not all recipes work with this.
  • Hi, thank you all for your amazing recipes. We have something called Festive Pudding - lighter than Xmas pud - got it in a Safeway magazine over ten years ago. We also have something that has no name in our house - probably someone out there knows what it is called - very simple, very boozy.
Get a couple of packs of decent chocolate chip cookies - DIP them into sherry for a couple of seconds and then pile into a log shape.
Whip some fresh cream with creme fraiche and just spread over it.
Crumble a flake or two and then warn your guests that they should only start small and stay there if they have to drive home - have had people have to stay on the couch till Boxing Day!!
This keeps happily in the fridge for up to two days so can be prepared on Christmas Eve.
If you want more of a kick, you can use ginger nuts, but choc chip cookies are great.
Merry Christmas everyone and thank you for posting your fabulous recipes, you have solved my Boxing Day buffet as once half the country leaves the home of one of the other posters, they come to me!!! ARGH!!!!!
