Florida 2022 - Tips and Tricks?

Hi all,
We have finally booked our first family holiday to Florida in 2022
I am looking for any tips anyone has?
For some background -
I have been a few times in my teenage years but that was some time ago and my dad was the responsible one back then
Really just want to make sure we get the most out of it for the kids as who knows when we will get the chance to go again!!

For some background -
- We will be staying in the Dockside Inn at Universal's Endless Summer Resort
- There will be 2 adults and 2 children (aged 11 & 3 at the time)
- We have the Disney and Universal combo ticket which includes the Disney fast passes (fingers crossed!) and the Memory Maker package
- Not bothered about the water parks or Sea World

While there, there are some relativity inexpensive things you can do..
Old town (which is close by) has car shows on Friday and Saturday nights
Congo Golf is also local, and fun to do with the kids..
Typhoon Lagoon and Blizzard Beach (may not be cheap, but kids love them)
Although you said you had no interest in Sea World, they have Discovery Cove, which offers Dolphin swims..
