Mortgage deeds?

Hello everyone,
just had a random thought following from something I read in here re mortgage deeds.
when would the mortgage deeds be signed? And This needs to be a witnessed signature ?
I exchanged on my property last week, but I haven’t yet seen the mortgage deeds, I’m a novice at the house buying and selling etc so just wondered when this usually happens as I have read conflicting information online?

They can be signed any time before completion - doesn't matter whether that's months before or minutes before, as long as the solicitor has them before completion. Yes, they'll need to be witnessed.1
