Your credit rating is purely for entertainment purposes.
    Not this again.

Given Experian allow you to "Boost" your score for nothing... Then it is even stretching "Entertainment" to far. More like a joke.

    1) yes - my uncertainty comes in the legal definition of 'partner' (there is nothing legally binding us as people, such as a living together agreement, outside of our ownership of our house and mortgage, etc.)

You don't need anything legally binding.

If you were both in a nightclub and someone you liked asked if you had a partner, would your girlfriend be happy if you said no?

    2) yes

That's the thing, there is no help or more context provided in these forms.
In my mind, if you are analysing my credit, then you only need to know the money that enters and leaves my account, but I'm far from understanding these systems that reward people for not living within their means, so I'm far from sure that I'm correct.

    Thank you!
There is no overarching legal definition of a "partner" and so its the common understanding of the phrase. The only way of binding people is civil partnerships and marriage and thats not exactly a strong bind in many cases.

As she's on the mortgage Id certainly half the amount as you both pay half.

They cannot see what goes in and out of your account let alone every account you hold anywhere. Having the cash to pay doesn't always result in actually paying hence banks are limited to a few data sources that are much more about previous declarations and history of managing credit.
