I have had horrendous problems getting organic peppers this year. Only really got organic bell pepper from supermarkets in last couple of weeks. Riverford had teeny ones and now have big ones from their own farm in France.The colour goes from green (unripe) to red (ripe). Basically you're paying for farmers to keep them ripening longer. To me, there is a definite difference between the taste of green and red but not so much between yellow, orange and red.  I like green in stir fries.
