I love peppers, though not the green as its too bitter.

So why are supermarkets charging more for a pack of three peppers of yellow, orange and red (or 2 of the colours) compared to buying 3 peppers of green, yellow and red? On the rare times I see a pack of their wonky/budget peppers with all yellow, orange and red (usually one red to 4-6 green)

For example - Tesco and Lidl do green, yellow and red peppers for around 86p. Their packs of three from the following orange, yellow and red are £1.25-£1.35.

I hate food waste.

I dont like green peppers either, but when ending up with one I put it with the bananas and hope it will ripen a bit! Maybe buy separately?

Buy whichever suits your palate and purse.

Maybe yellow and red peppers are more expensive as they have to stay on the plant longer to ripen.

Personally, I think peppers are over-rated.

For Tesco the 86p pack is Nightingale Farms brand (mock Tesco Value) and the £1.35 pack is sold as Tesco Sweet Peppers.

It may be down to colour but quality grading is more likely IMO.

If you don't like food waste it would be much better for you to buy the ones you will use as single peppers, no plastic wrapping either.

Green peppers are unripe; yellow and red peppers have to be left on the plant to fully ripen and so each plant produces fewer fruit.
That's why the ripe ones are more expensive.

Thanks for that. Very logical but I'd never thought of it like that before. I'd assumed that, as demonstrated on here, green was less popular so cheaper as harder to sell.

I buy the wonky bags when they have a mixture of colours but if (as currently) the bags are mostly green then I'll go for the 3 packs or even individual.

Sometimes the green ones have a little flush of yellow or red and then it's worth leaving them in the pack with their friends for a few days and they will colour up.

Apparently there has also been issues with growing and harvest this year so there is a delay with red and yellow getting ripe, hence more green peppers.

We get meal boxes from Gousto and Hello Fresh and all peppers from them have been green recently and apparently thats the reasoning.

No, green peppers are ripe it's just that peppers get sweeter as the colour changes. Personally, I don't buy yellow or orange ones as they are bland, red and green are the ones I cook with. Yellow and orange peppers are more for salads as sweeter, as red or green peppers in salads would be a bit strong.

Orange and red ones are sometimes a bit floppy; green ones are crisper. I've never really noticed a great deal of difference in flavour.
I like chopped up green peppers in a cream cheese sandwich.
