Sorry, but Beef Wellington is my all time favourite dish and it must be made with fillet. I promise it will be worth the extra money1k to 10,00k in 2010 challenge member 242!0

I agree - topside is NOT the right cut for Beef Wellington / Boeuf en Croute.
Ask your butcher for tail fillet, tell him it is for 2 of you & he should give you a piece the right size.
BTW, it is very nice cold, with mustardy mayo & saladWe had it for Christmas lunch as only me & OH.

I made BW one xmas. Unable to find fillet (shelves were wiped out cos it was xmas) I used another cut - can't remember though it wasn't topsie thinking it will be okay. It wasn't it was too tough to carve the slices easily.
The only way I think you **might** be able to get away with not using fillet is if you do an individual 'parcel 'beef wellington, rather than a whole one.0 -
I did this once ages ago after seing BW on telly and not being able to find any fillet.
I sealed the beef in a pan, then put it in a very low oven in foil for an hour ..left to cool ..then started as if it was fillet. I was VERY hungry by the time it was ready so it may not have been as good ad I remember, but it wasn't tough. The pate helped keep it moist which is what is important I think, it would be easy to lose the texture over a long time and make it dry.

Whoo hooo - I can make beef wellington..!!
It was delicious - the cut of meat (fillet, not topside!) was absolutely gorgeous and just tasted divine.
Thanks everyone for your help - if I had done it with topside it would've been rubbish and spoiled my evening..!
