    @Pollycat thank you for that!

    @goldfinches that mushroom and garlic looks like a great addition to the pantry. I’ll try looking for it in my local M & S.  Mr. Jings would love it for soup making especially because he’s been into miso lately. How do you use it?

    Love this rice, great for veggies, as a side dish or throw in chicken and have it as a main
    Thank you for this recipe @_shel, I’m going to try this next week with brown rice.
    Make sure you take notice of the advice for brown rice.

    RICE TYPE: This recipe is best made with long grain rice because it's less sticky than short and medium grain. Basmati and jasmine will also work - around the same cook time. Medium and short grain rice will work but the rice will be a bit stickier (because that's how short grain rice is).

    Risotto and paella rice is not suitable. For BROWN RICE, do not top with mushrooms at the beginning. Cover with foil, bake for 30 minutes. Then remove foil, top with mushrooms and bake uncovered 30 - 35 minutes until mushroom is golden.

     Yup, I overlooked this, thought I knew best and it would taste better. Waited 2+ hours for our dinner!

    LOL.
    Aldi sell easy (i.e. part) cooked brown rice.
    I wonder if that would cut down on cooking time.

    I think it would go really well with all sorts of things, pork loin chops, maybe even really good quality sausage like Toulouse.

    I've seen this lady's recipes somewhere before.
