I’m going to be making a large purchase soon (£12500) and was wondering what would be the best Amex card to get for this? If I used the premium cashback card would I get the 5% intro and also the extra 1/1.25% on top as I’m spending enough to qualify for the extra cashback, albeit in one transaction?

The Amex 5% intro bonus is capped at £125 (max £2.5k spend) in the first 3 months.
I'm not actually 100% sure what would happen if you spent more then that in a single transaction. They might apply 5% on the first £2.5k then the normal cashback rate on the remainder, or they could just cap the cashback. Someone else may have some experience there. And of course it's conditional on getting a high enough limit anyway.
My understanding is that the break even point is £10k per year spend - any less it's better to have the fee-free card and any more it's better to have the fee-paying card.

Unless anything has changed, they cap the cashback at £125 for the first 3 months. I got caught out on that a few years back! Could you split the purchase so you did £2,500 first and then the other £10,000 after the 3 months were up?
If so, then the £25/year platinum credit card is definitely the one to go for. To be honest, even if you had to put it on in one go, it's probably still the best option!1
