Excursions covered under travel insurance???

I perhaps in an error of judgement, booked flights to South Africa and then booked a safari independently. All booked two weeks before the 1st covid lockdown in March 2020 to go June 2021. Flights refunded but the South African company will not refund and only move the dates to whenever I want to go.
Didn't claim at the time due to thinking I may go at some point this year. However dont see any hope of going any time soon so would be looking at 2022 at the earliest but hopefully will have an extended family then so circumstances will have changed and no inclination to go. As such rang insurer today for the 1st time and was told cant claim due to them offering the service at some point in the future when needed.
Interestingly the policy states under exclusions "recoverable costs: any costs that you can recover from elsewhere". Not sure the person on the phone understood that it seems their point doesn't work here to decline any claim as i cannot recover these "costs" back! I paid on a debit card.
Anyone experienced this? Googled it etc but cannot find much on it. Thank you.

I think your problem is going to be that the safari company is still offering to supply. It is now you who, in your own words, will have no inclination to go.

Surely travel insurance covers this as lots of companies would move dates yet people claim as they can no longer go0
