Ah for those I tend to buy cheap and cheerful from the supermarket and replace when they warp. For something more robust it could be worth looking in one of catering suppliers like Nisbets. I do have a hard anodised one which is great, all the plus points of non-stick but much more robust. It's a Stellar one bought in TK Maxx several years ago. They can be quite pricey though.Maxson said:

I agree with the ikea roasting tray, we have a couple of sheet trays, one from TK Maxx which i think is a stellar anodised and the other (newer one) from Nisbets - which is also excellent.

My stainless still roasting tins are my late grannies and she died in 79
My baking sheets are vitreous enamel , absolutely solid, do not buckle or twist and hold the heat well - great for pizza and scones etc. I bought the two I have here now in 1995 and still as good as new
I use baking parchment on them. If baking Ill use the same piece a few times so its not that expensive1 -

A lot of the professional baking sheets seem to be Aluminium and I remember my parents replacing all the aluminium stuff in the 80s when it was realised they were slowly poisoning our brains! I also remember they were very prone to scratching. So is aluminium cookware OK now?1
