Until you find out who has your money there is not a lot you can do.
It appears the individual apartments are privately owned as they were advertised on property investment sites as having potential rental income.

Update:
- Booking.com confirmed that the property is no longer listed on their website and that they presume the business is no longer trading (as suggested previously in this thread).
- Insurance have referred my claim to the authorisations team, though they have halved the value since my booking was for two people and the insurance was mine.

I previously filled out all of the forms for the credit card route, but it was turned down around Christmas for the 120 day reason. I'm not sure how I would have gone about appealing this decision...

In any case, I will let you know the outcome of the insurance claim.

Update:
The original submission to the insurance authorisations team was bounced on account of me being eligible for the full refund rather than half (error from the agent who was handling my claim). My case was resubmitted with an additional bank statement that proved I had paid the amount claimed, and the claim was accepted a day or two later. I have just today received the refund in full.

This is the perfect example of why travel insurance is so important, and why I'm grateful to have taken out an annual policy (at ~£30pa) for the last few years.
