     Go visit an employment solicitor or see your union ASAP. 
     They can not force you in to self employed work or waive your redundancy rights with the threat of unemployment if you dont. They have legal obligations to employees and you do not have to accept this

    I'd second speaking to an employment solicitor.  Your employer sounds pretty clueless.
