I have seen many YouTubers show blown up images of their phone screen, while they are perhaps reviewing or just using an application.
How is this done please ?
Yes, I could attach a camera to a tripod and film the phone, but that would only really work if I wasn't going to be touching the phone .. my hand would cover the screen.

Does your phone not have a screen capture function?1

Team Viewer ( if its Android ) to mirror it to the PC (don't think it can work on Apple ) - That will get live image on PC
Put TeamViewer QuickSupport on the phone, then connect to that from TeamViewer on the PC
You can then use OBS on the PC to record it ( or just a sub window showing the phone image) as a video1 -
I have a Chromecast plugged into my TV.
I can cast individual apps such as YouTube, Netflix, Facebook etc.
Or I can cast my android phone screen to the TV so anything that is on the screen is shown on the TV.0 -

I sometimes have to demo mobile apps and screens. I usually use MS Connect (included with windows 10) which allows me to wirelessly project my mobile screen to my computer. You can then capture that using suitable recording software.I don't care about your first world problems; I have enough of my own!0
