If I didn't want to keep them, I would yank one off in a different room to see what I'm dealing with underneath!
Ah, planks of wood 9-12" wide on the sides & top of the reveal with a bit of architrave covering the plaster around the edge - Sounds just like my windows. Probably held on to the walls with a couple of 4" nails that are rusting through. Take the boards off, and you'll find bare brick. You may well find that the boards split as you try to lever them off and you'll certainly make a mess of the plaster.

Treasure the moments that you have. Savour them for as long as you can for they will never come back again.

I'm now swaying more towards removing mine, long-term, having it all lime plastered or having nicer surrounds put on, more in-keeping with the age. I've a while to think about it and appreciate your help!

Hopefully OP will say more about his/her windows, so we can try and solve his / her issues.

Our double glazing keeps out enough noise to enable us to sleep soundly.  Until the dawn chorus wakes feline madam, who then bounces on the bed to tell us that as the birdies are awake, it must be breakfast time !

When I had double glazing yes it was rubbish and old.

Our triple glazing, barely. We hear the chinnocks every night when they are training but Generally don't hear much else unless it's really loud and really close.

I wasn't expecting much more from triple glazing after reading comments but for us it works and our place is warmer (probably because the windows aren't 40 years old😂)

my double grazing was installed piecemeal from different companies, on some windows there is a very small overlap of the opening panel against the fixed panel, so the opening panel only just bears against/on the rubber sill by a few mm, on other windows this overlap is 5mm
on one of these windows i've glued/fixed a length of upvc trim down the side of the opening panel (hinge side) this now bears on the rubber sill and cuts out most of the noise
