I have since found details.

I applied to two companies I had mortgages with and they both replied they needed more details, so no further action was taken. At the time I could not find any, however since I have found both of them. Am I still able to proceed with this claim without going to court ?

    You could ask them if they will reopen the complaint.

    I can't think under what circumstances you would want to go to court, unless you simply want a day out.

    The deadline has long since passed, they may use that as an excuse not to look at it again.

    The best you can do is write to them, enclosing copies of your evidence, and see if they will re-open your complaint.
    You don`t give any timescales in your post, if its been longer than 6 months its unlikely they will do anything.

    However its not really an issue you can deal with via the court system.

    Is the evidence proof of payment of MPPI or proof of mortgage?  If the latter, then it is unlikely to help as most MPPI sold by lenders was not built into the mortgage but standalone with its own direct debit.

    What would you go to court for? Having PPI is not illegal, nor is selling it. Indeed, MPPI is a good thing, it can save your home if you lost your job as an example. Court burden of proof is a lot higher too.
    Further, even just having proof you had PPI is not some sort of golden ticket for a refund - you need to show why you feel it was miss-sold and what evidence you have to support that. Remember on a 25 year mortgage, even having something like NHS sick pay isn't a winning reason for an MPPI complaint.
    On top of that, you would have to complain to the seller - the company providing the mortgage didn't necessarily sell the MPPI either.e.g. if you used a mortgage broker, unless the person who sold it worked for the provider. If it was pre-2005 then you'd be out of luck anyway.
    You are free to write to them and offer them this evidence you have and they may accept it, they may not depending on whether they sold the PPI cover. Proving you were miss-sold and eligible for a refund seems like an uphill task to me.
