using holiday towards sick pay

    No. Not least because when you're off sick you still build up holiday entitlement and would be classed as being sick, not on holiday, so wouldn't use up the holiday entitlement. 
    our employers might not be happy about you taking holiday at the end at all - if you are well, then they may need you back at work, and if you are not, then you should be on sick leave not holiday.

    Yes, but I don't have enough paid sick entitlement.

    BY mutual agreement holiday pay can substitute sick pay. A choice some employees prefer to make when sick pay is not 100% of salary.

    We have allowed people to take holiday at the end of sick leave, especially if the sick leave is more than four weeks. It's preferable to someone coming back and diving straight back into work, then going sick again. 

    But it is up to the employer.

    Yes, your employer could allow you to take last week as holiday instead of as sick leave, but I understood OP was proposing to take 2 weeks leave as sick leave at half pay, (so receiving the equivalent of 1 week at full pay)  and also take 1 weeks holiday to be paid, so they were effectively getting paid both sick pay and holiday pay for the week of holiday. - i.e. getting paid 2 x half pay (sick pay) + 1 x holiday pay (full pay) to cover the same 2 week period.  the net effect would be that the total amount that they would be paid would be the equivalent of 2 weeks full pay, but they would be being paid twice for the same week. 
    OP, if you substitute holiday for sick leave then you could have the two additional weeks off and would receive 1 1/2 weeks pay - 1 week half pay (sick pay) and 1 week full pay (holiday) .
    The only way I could see that you could get full pay for the full two weeks would be if you asked to take both weeks off as holiday, and your employer agreed. (which, especially if you were furloughed at all last year and have holiday carried forward to use up, they may be quite happy to do)
