Need sour cream for sour cream in the cake

I substitute creme fraiche for any recipe saying sour cream.
I use it in stroganoff and goulash, as well as for blue cheese sauce or mustard sauce.

A quick google suggests that 'Russian sour cream' is different to the type normally found in the UK - the fat content is different and it cooks differently. It looks easy to make though, so I would just do that. This is the first recipe that came up for me: https://www.196flavors.com/russia-smetana/

Polish version is also available in large Tescos. I buy it often. I must confess I struggle to understand the OP

Lemon added to cream makes it sour- you just have to decided if you want single, double or whipping cream!
Can you please tell me for the future, can I boil cream with lemon juice (just boil)? or is it just whipping up? I'm new to this cake baking

in fact, I ended up buying sour cream and cream with baileys (branded), then made a custard! Baileys cream is just a godsend - super unusual taste!
I was afraid that just cream and lemon juice would not cook the cream on the fire.
