Spa Day Voucher Help Needed

We where bought a Spa Day Voucher(Full day with treatment, lunch, drinks and full use of facilities) from Hilton Double Tree last xmas which is due to expire on the 8th of december 2020. Due to covid we where unable to attend the date it was booked for in June. Hilton never bothered to contact us to say it was cancelled and we couldn't speak to anyone and no-one bothered to return phone messages. We have since spoken to Hilton and they have agreed to extended it to March 2021 after they refused to extend it at first. They are only offering the voucher to be valid to have a treatment, an hour in the swimming pool and a lunch. To us that isnt a spa day and not worth the amount of money that was paid for the voucher. 
We are looking for advice on what or next stage should be.
Please dont say we should just sit back and give Hilton or money for nothing.

Was the hotel still closed due to lockdown on the booking date?

Who bought the voucher? It is the buyer who would have any claim.
How did they pay? If  paid by debit/ credit card they could try a chargeback or (S75 if the cost was over £100 ) claim for service not being provided.
