At the moment we have Lifx bulbs in a few places and Nest doorbell, thermostat and fire alarm.
A number of our kitchen appliances are also “smart” though this has been a feature they happened to come with rather than a reason why we bought them. That said our combi steam oven in generally has been used much more than I anticipated and that includes its smart features.
TVs and connected devices I think are just taken as a given that they are “smart” these days.1 -

I have a eufy floodlight cam which i fitted where i had an existing floodlight, it is great. I have lots of Google homes. I also have some smart plugs for things like xmas lights. I also have a yeelight bulb in the hall and some motion sensors.
I agree about getting cat 6A around the place, I would definitely do that if It was rewiring a house.1 -
I would avoid putting in anything "smart" that cant be easily removed. Technology changes so rapidly that whatever latest gadget you put in today will be obsolete and replaced with something better next year that you'll want.
Also the need for CAT5/6 cabling is overkill for most people. Yes powerline adapters are rubbish but wireless mesh networks are here now and are super reliable and extremely good. I'd recommend running CAT6 to any outbuildings, but beyond that, unless you live in a mansion with stone walls, a good mesh wireless system will suffice. I have a 4 bed house and a cabin about 20 meters from the house. I have a £150 wireless mesh network and can consistently get over 300Mbps of my 350Mbps connection anywhere in the house. In the cabin, it drops to around 100Mbps -130Mpbs which for what i'm doing in there is more than enough.
As for technology, pretty much what's been mentioned already, smart bulbs, firesticks, eufy cameras, eufy doorbell (Eufy as there is no monthly subscription) Alexa's, Hive .. ontop of all the usual, phones (x4) ipad's, laptops, TVs, gaming consoles etc etc2
