I'd go MDF over pine - unless you wanted to have a wood finish. MDF is more stable, requires less preparation, doesn't have knots to block, and often (usually?) comes pre-primed which will save you a lot of hassle.
I'd also consider going for a taller board, certainly in feature rooms, but I'd do this in every room if you were going to replace them all anyway - 175mm-tall ogee looks nice, I think.1 -
How about a wood effect porcelain tile for the kitchen and hallway?0
