I'm considering a holiday in Fiji for October 2021. This holiday is likely to cost upwards of £5k. If I pay by CC and the holiday goes to pot and I have to cancel due to Covid-19, will I be able to get a refund from my CC company?

Not if no contract has been broken.

If the flights operate and the hotel is open, you're on your own as you fully know the risks.

Edit: This assumes booking a package through an airline that will operate the flights. The situation becomes more complicated with a travel agency and more complicated again with booking the separate components separately.

It would depend on how it "goes to pot" If the holiday is cancelled by the supplier and not available to you then the supplier should refund you and your credit card may get involved if there are issues eg if the holiday company goes bust.
If the holiday is still available and you choose not to travel then your card company would be of no help and you would be looking to the terms of your booking or your travel insurance

Thanks for the replies. Too much of a risk, I'll leave it.

Personally - I'm not booking anything holiday wise next year. (yet)
    Would I like a holiday ? ---- Yes
    Do i need a holiday ? --- Absolutely
Can I be doing with the stress and hassle of not knowing if it will actually go ahead  ?--- Nope
It can wait - the countries will still be there (but who knows about the plane, hotels, bars etc)

If you book through BA Holidays you will only have to pay a low deposit with the balance being due three weeks before travel.
Up until three weeks before you can cancel and receive your deposit back in the form of an FTV.
If they cancel you get your deposit back.
    No lose situation !!

I've got Holidays booked in January, February, March, April and May.
First four with BA (Mini Breaks Europe) and last USA with TUI

Are on on commission with BA? You do seem to reference them fairly frequently.
It’s not a no lose situation if the guidance for the country you are travelling to changes in the 3 weeks after paying.
All shall be well, and all shall be well, and all manner of things shall be well.

Pedant alert - it's could have, not could of.

Not sure how you have come to that conclusion, as in the circumstances you describe a full refund would ensue normally within a week.

Can you kindly retract that ludicrous unfounded assertion or explain what you actually mean ?
