Is it possible to have my gas disconnected, but still keep the meter?

I don't use gas, but pay a standing charge for it.  I contacted my energy supplier, coop octopus energy, and said to them that i don't use gas, but have to pay for a monthly standing charge, and asked them whether I could simply have the gas "cut off".  I was told that I would have to have my meter physically removed.  Is that right?  That sounds a bit weird, TBH.

The meter belongs to the supplier.  If the supply has been cut off, they have no reason to leave the meter there - it has nothing to measure.  When you have the supply reconnected in future, they will fit a new meter.
If you have never used gas since moving into the property, then you shouldn't need to pay the standing charge at all, because you have never "taken a supply" of gas.  If that's the case, discuss it with your "supplier".  This is down to the wording of the Gas Act. (I put "supplier" in quotes because they can't really be your supplier if you don't use any gas!)
    If it sticks, force it.
If it breaks, well it wasn't working right anyway.

    As Ectophile states above.
But why do you not use gas, is property all electric, do you own or rent?

You will also reduce the value of the property and face a large bill to reconnect and re-meter it.
As above, you are spending at least 300% more per kWh by using electricity over gas.

A network can’t disconnect a gas service with a meter in situ.
The meter will need to be removed first so what they have told you is correct.
To add, if no contract is in place then your gas service will or as is the case should get cut off within 12 months. Some of the time networks aren’t even notified in the first 12 months and get them at 13-14 months old.
Networks get lots of GSMR jobs from Xoserve.
There is a measured performance from OFGEM on these.

Perhaps they are using heat pumps or solar, in which case, no they are not.

Well, they are, but 3kW of output heat from a heatpump might only use 0.8kW of input power.
