Have you initially contacted ACAS on this matter?
That would be your first process that would need to be fulfilled if you want to take matters to a Tribunal.
They may well be able to settle the disputes you have with the Company and without the need of an Employment Tribunal..
It is now my understanding that in order to be able to take matters to a Tribunal this process has to be adopted and for now maybe you should concentrate on discussing this immediately with ACAS.

Are you speaking on behalf of the GMB? It's very unusual for a union to agree to represent employees on a matter that arose before they became members. (Otherwise everybody would be doing it and not joining unions and not paying their dues until they needed their help!)
