Thank you for all the responses. It is good to see this MSE forum is working so well to get feedback and conversation happening. Currently being in isolation with COVID19, the time to ask others has been useful, all be it that the actual Legal issue of whether a person from the Probate Solicitor is acting ethically is perhaps more of a dilemma to review further.
In what way are they acting unethically?

An offer was made. It may have been lower than the only other offer, but I believe that the estate agent handling the sale
    a) is duty bound to pass all offers on to the sellers and
    b) should do 'due diligence' on the buyers.

So at the time the receptionist made the offer, there was one other offer? On looking into both offers, the estate agent may have discovered that the party making the higher offer had a property to sell and needed a large mortgage, whereas the receptionist had already sold a property and was renting, therefore no extended chain. On reporting this to the sellers, which offer looks most inviting?

Note I'm speculating here, but honestly I'm with Keep_pedalling and Mickey, I can't see anything dodgy going on at all. What legal or ethical issue is there that would need to detain you at all?

The Zoopla price estimate is just that, an estimate - no better or worse than an EA suggested marketing price.
I'd actually go a step further than that and say that Zoopla estimates are (normally) a fairly bad guess which bears no resemblance to the actual value of the property unless it's been sold in the last 12 months (and even then they tend to be wrong!)
