I wouldn't bother to do this for sort code and account number, but if you are concerned, one option would be to create a small file in Notepad or Word containing the sensitive data. You can add this to a ZIP file and encrypt and password protect it. Send the protected file via email and communicate the password to the recipient via another means such as SMS (you could just password protect a Word file, though I'm not sure what the default encryption standard for this is).
