Put some into a pension would be the obvious one, give you a nice retirement pot.
Be indulgent with food, treats, toiletries.
Replace furniture, clothing, soft furnishings.

The fact that you received the severe disability premium indicates that your ESA claim is either wholly or partly income-related.
This is affected by savings in excess of £6,000 so either you or your appointee need to contact the DWP and update them on the amount of money you have saved1 -
If it was me, I'd be using the extra money to pay for things like cinema and restaurant trips with my friends.
